Have more than 25 years’ professional experience and exposure, in the international and domestic scene, handling different types and sizes of properties. From small scale to large scale operations (hotels, resorts, banquets, restaurants, bars and canteen concessions,), including cruise ships (world- cruise), and managing various departments as acting and as a Director of FB, and at times as OIC for the property, and in-charge of the multi-nationality of staff, for some properties I worked for. Performed and managed successfully with teams for Pre-Opening and existing business, in huge cities, suburbs and far-flung remote islands in different parts of the globe. Well experienced in innovative marketing and sales strategies, including administrative and executive duties. Have experience in handling as over-all in-charge of the F&B Department which includes Kitchen operations, Stewarding, Room Service, Banquets, Restaurant Outlets, Bars, and outside Catering for social and corporate events, very familiar in handling functions from 10 pax to 10,000 pax events simultaneously. Member of the Chaine' des Rotisseurs. Does training and creates skill specific modules to tailor fit each or all employees, to improve or refresh their working knowledge and skills, for their job description related to the operation, for rank and file, up to supervisors, Outlet Managers as well as Department Heads or Junior Executives. Has keen business acumen and does profit and loss report, departmental revenue analysis, cost control management and efficiency, purchasing and inventory control monitoring, and other related admin and executive tasks. Familiar with other department's operations such as housekeeping, engineering, concierge, security, front office and reservations, and other operating departments. I am also well versed in the ISO and HACCP international health standards of hygiene and sanitation operations as well as the W.H.O. Hotel and, Resorts, Bar and Restaurant guidelines for Covid-19 protocols. Accredited and certified as Occupational and Safety Health Officer with an SO2 position, accredited by the Department of Labor and Employment (D.O.L.E.), under their OSH training program sponsored by PHOA (PHILIPPINE HOTEL OWNERS ASSOCIATION).
